Scotch River Sour
This is a very unique and innovative beer brewed only once a year using fresh local spruce tips and birch sap from the banks of the Scotch River just east of Ottawa. This beer is soured in primary fermentation by a proprietary house strain isolated from our very own brewery.
We call this one a Woodland Sour - Could a new beer style be born?

The concept: a refreshing, savory, and sour beer.
Slightly crazy and definitely unique in formulation, the results are all the more surprising - a refreshing and easy drinking beer that does not sacrifice the complexity of the flavour and aroma profile.
