Scotch River Sour
This is a very unique and innovative beer brewed only once a year using fresh local spruce tips and birch sap from the banks of the Scotch River just east of Ottawa. This beer is soured in primary fermentation by a proprietary house strain isolated from our very own brewery (code name: Hercules Lacto).
We call this one a Woodland Sour - Could a new beer style be born?
